1. Spicy dried yellow snapper
a) Raw materials:
- 15-30 dried yellow snapper
- Onions, dried garlic, scallions, ginger, chili
- Condiments: sugar, fish sauce, filtered water
b) How to do:
- Step 1: To ensure hygiene, you should lightly cover the fish with warm water, then drain. Fry the yellow snapper in with cooking oil to regain its crispiness, then remove to a plate (or you can bake it).
- Step 2: Put the pan on the stove, add cooking oil, saute the chopped dried onion and garlic. then pour fish sauce, sugar, spices so that the fish is tattooed. Add a few slices of chili if you like it spicy. Wait for the above mixture to boil, then put the golden fish in the rim with low heat
- Step 3: When the water is almost dry, add minced ginger to create aroma, then add scallions and roast the pan.

2. Yellow snapper fish salad
a) Raw materials:
- 10 dried goldfish
- Green mango, carrot, garlic, chili, lemon and assorted herbs
- Condiments: sugar, fish sauce, filtered water, peanuts
b) How to do:
- Step 1: Grill the fish until it turns golden brown, then shred it and remove the bones. Mango and carrot peeled, washed and grated
- Step 2: mix fish sauce with the ratio of filtered water: fish sauce: sugar: lemon juice (1:1:3:3); add minced chili and garlic
- Step 3; Put the mango, carrot, and yellow fish stock in a bowl, mix well with the fish sauce until all the ingredients are fully absorbed.
- Step 4: Put the salad on a plate, add some herbs and peanuts (you can add a few slices of chili pepper to make it beautiful).
*Tips for grilling golden snapper
If you don't have charcoal available to grill fish, you can refer to the following ways to grill fish, both fragrant and less burnt.
- Bake the fish until golden brown in an oil-free fryer
- After preliminarily processing the yellow snapper, you put the yellow snapper in an oil-free fryer lined with foil (or parchment paper). Turn on the oven to 180 degrees for 3 minutes. After 3 minutes, you take the fish out, turn it over and bake for another 3 minutes 180 degrees and it's done
- Bake the fish until golden brown with alcohol 90 degrees
- Put the yellow snapper in an old stainless steel pan (or saucepan), porcelain bowl/plate
- Pour a moderate amount of alcohol (depending on how big or small the fish is) on the fish, then flip the fish over and over for about 1-2 minutes to let the fish absorb the alcohol evenly.
Ignite the fire in the pan to start grilling, use chopsticks to quickly flip the fish over and over until the fish curls and the alcohol burns out, the fish is cooked.
Keep the alcohol bottle far away from the place where the fish is grilled, if you need to add more alcohol, you must let the fire of the old alcohol go out before adding new alcohol. Otherwise, the risk of burns will be very high
